The Potato Salad



Anytime I bring this potato salad to potlucks, church, work, family functions, I get several requests for the recipe. I even had a person stop me in the grocery store and ask why I haven't given them the recipe yet. Really, I don't have a recipe, it's just a way of making it that my mother showed me. But I will give you the main idea.


These are ingredients for a large crowd, you can cut them in half for family size.

5lbs of red potatoes sliced into quarters and boiled till soft but not mushy. If I'm using red potatoes I never peel them, just throw them into the salad peel and all. Russet potatoes I peel.

4 hard boiled eggs chopped

1/2 cup of chopped dill pickles

1/2 cup dill pickle juice

3 stalks of celery chopped

1/2 cup of sweet onion chopped

1tbs of salt

1tbs of mustard (for color)

1 8oz container of sour cream

1 small 12oz jar of mayonnaise

Cube the potatoes add the remaining ingredients in a large bowl mix and refrigerate.
